Couscous Chicken Strips

I had this recipe jotted down and have no idea where I got it. Wasnt my idea but I'm sure glad I found it! These chicken strips were a hit with everyone at the table. That doesn't happen very often. I wasn't sure how they would go because fried couscous is VERY crunchy and I have a very texture-picky little miss. She liked them so much that she decided not to finish her ice cream after dinner but have another chook strip instead.

They are nice cold too, so if you Bento, they are nice and yum for something different!

DINNER ON THE TABLE: about 1/2 an hr

INGREDIENTS:
1 cup (200g) Couscous
1/2 cup Parmesan Cheese (1/4 would be enough but im a cheese freak)
2 TBSP finely chopped fresh flat-leaf parsley
1 TSP Finely grated lemon rind
2 eggs
800g chicken breasts, sliced thickly into strips
1/3 cup (50g) plain flour
Oil of your choice (for shallow frying)

Easy peasy Aoli sauce:

2 cloves of garlic
2/3 cup (200g) mayonaise (homemade or praise brand are best)

METHOD:

1. Combine couscous, parmesan, parsley, and rind in a shallow medium sized bowl.
Whisk eggs lightly in another shallow bowl.

2. Coat chook in flour and shake off excess. Dip chook in egg, then in couscous mixture.

3. Heat oil in a large frypan on high heat. Cook in batches until cooked through. Couscous will be slightly golden. Drain on absorbent paper.

Serve with Aoli and a big fresh salad.

To make Aoli, pulse the garlic in a food processor or with one of those baby food puree stick thingos until very finely chopped. Scrape into mayo and mix well with a spoon.
