No-Bake Energy Bites - yummy, quick and easy!



I started making energy bites this year when I found the recipe on pinterest. Don't ask me for the link, I have no idea where I ended up on this pinteresty page-hop. But I believe the recipe is widely spread across blogs so I'm sure it'll be fine to share once again.

These bites are so delicious. They kind of taste like a summer roll, but not as chewy. They are relitively healthy and really do boost energy a bit! CurlyBoy (1.4) loves them (but doesn't need them!) CurlyGirl won't try them because they look yucky apparently. But she is very happy to help me make them. I think that's because she sneaks in a few choc-bits when she thinks I'm not looking. So really I make them for myself, my hubby and when dad comes over he feasts on them too.

They are quick and easy to prepare. No baking involved so even very young kids can help. At this stage I measure out all ingredients into little bowls, explaining the whole 1 cup, half cup thing as I go. Then she will dump all the ingredients into the bowl and mix with the wooden spoon. If she doesn't help me I get lazy and run the stand mixer for a few seconds instead of wooden spooning it, but if she is helping we do it manually haha.

I wanted to share the recipe with you because we make these ALL the time (my 4yr old is starting to remember the list of ingredients haha) and they taste great and are better to munch on than junk like chips or bikkies when you get peckish. I've started having them with my evening cup of tea instead of having chocolate or something equally as bad. I actually prefer these bites!


If you've never tried these before make sure you hold off trying one till theyve been shaped into balls and chilled in the fridge for about an hour. It's worth the wait, they taste heaps better when they are chilled.

No-Bake Energy Bites

Ingredients:
1 cup oats
1 cup coconut flakes
1/2 cup ground flaxeed (aka ground linseed)
1/2 cup mini chocolate chips (use good quality choc chips not cheapos!)
1/2 cup peanut butter (or another type of nut butter)
1/3 cup honey
1 tsp vanilla extract

Method:
Mix everything into a medium sized bowl until thoroughly combined.
Let it chill in the fridge for half an hour
once chilled, shape into balls, and enjoy! (give them another half hour in the fridge for better taste IMO)

These can be stored in an airtight container in the fridge for up to one week, but they won't last that long, they are scrumptious!

This makes about 25 bites give or take depending on the size you make.
